Boat and Oi, a Thai husband-and-wife team, ran Thai restaurants in Sydney for many years, building several venues and a loyal following, but rent and living costs there kept climbing. One day Boat came to help a friend fit out a venue in Adelaide and happened to spot the empty space next door, and it just felt right. The couple decided to move and open a Thai restaurant in central Adelaide, with Boat running front-of-house and doing the interior design himself while Oi leads the kitchen as head chef. Their reason for moving wasn't only money, but that Adelaide let them slow down. Lower costs than Sydney allowed them to price food fairly without cutting quality, and Boat insists the customer comes first and profit second. The response beat their expectations from the very first week. For them, changing cities wasn't a retreat but choosing a more sustainable pace for both life and business.
